Toasted Coconut, Chocolate Chip, & Hazelnut Cookies {gluten-free, dairy-free, sugar-free}

I’ve come to realize that a lot of my time is spent staring off wondering what I’m actually doing that is useful, besides staring off into the void. As you can probably see, this is counter productive, because I’m doing nothing and worried about my doing nothing rather than simply doing something. Is anyone one else on this crazy cycle? It’s a thing.

Also, be warned: when in this state, I have a severe weakness for pop songs. Full on danced out music videos happen in my kitchen regularly, complete with fish eye camera close ups of me singing passionately to, you know, whoever on the other side. You got that in your head? Again, you’ve been warned.

Maybe it’s the result of a warm front and a cold front running into each other and creating the threat of storms and just weird pressure, and that weird pressure is throwing everyone off. That’s probably it. It’s not that I’m crazy, it’s the weather. Ya, I’ll keep telling myself that.

So here we are with the weird flours. Toasted buckwheat kashi flour, & hazelnuts ground into a flour (before they reach the butter stage!) Deep, toasty nuttiness that is quite perfect.

These scared me a bit as I was forming them into their little balls. They looked a bit too much like health food cookies, and to be frank, I was just not in the mood to pretend like a “health” cookie tasted like a normal cookie.

Friends, these are delectable, non-“health” tasting cookies. The toasted coconut & the hazelnut flour add a depth that is complimented by the maple syrup & dark chocolate chips. They’re wonderful, and you should have them in your life.

Toasted Coconut, Chocolate Chip, & Hazelnut Cookies {gluten-free, dairy-free, sugar-free}

1 cup toasted buckwheat flour*

1 cup hazelnut flour

1/2 cup flaxseed meal

1/2 teaspoon of baking soda

1/2 teaspoon of kosher salt

1/2 cup maple syrup

1/2 cup melted coconut oil

1 Tablespoon vanilla extract

1/2 cup chocolate chips

1/2 cup lightly toasted coconut

     *Normal buckwheat groats will do just fine for this as well! They are pretty cheap in the bulk section of your grocer.

Combine dry ingredients in large mixing bowl. Combine liquid ingredients in medium mixing bowl. Pour liquid ingredients into dry ingredients mixing bowl. Chill mixture in refrigerator for 15-20 minutes.

Preheat over to 350 degrees.

Scoop rounded teaspoons of mixture onto baking baking sheet lines with parchment paper. Bake for 10- 12 minutes. Allow to cool for a few minutes on the parchment paper, then move them over to a cooling rack.

makes 20-24 cookies
